Shangri-La Hotel, Singapore Appoints Takaya Ishizuka As Head Chef of Nadaman

Shangri-La Hotel, Singapore has appointed Takaya Ishizuka as head chef of Nadaman. In his new role, Chef Ishizuka is responsible for the success of the restaurant’s culinary operations and food safety management system. He will lead the creative efforts in choosing the best seasonal ingredients for Nadaman’s signature kaiseki experience, described as the art of transforming the blessings of nature into food, which has delighted diners for more than 180 years.

Prior to this appointment, Chef Ishizuka was the assistant head chef at Nadaman Zipangu Tokyo. Before returning to Japan, he helmed the kitchens of Nadaman at Kowloon Shangri-La, Hong Kong for seven years. Driven by the desire to impart his Japanese culinary skills to young aspiring chefs in Hong Kong, he later joined the recognised VTC Hospitality Industry Training Development Centre as a culinary instructor for two years.

Brought up in a family of chefs, Chef Ishizuka discovered his passion for cooking at the tender age of nine. He started his career with the Nadaman group of restaurants in April 1991 as a trainee. Armed with 23 years of culinary experience honed by Nadaman’s stringent culinary standards at its flagship restaurant at Imperial Hotel in Tokyo, as well as other parts of Japan and Hong Kong, Chef Ishizuka is well versed in all areas of Japanese culinary techniques.

Ishizuka will use his expertise to continue Nadaman’s time-honoured tradition of presenting premium seasonal and authentic Japanese creations, as well as kaiseki. In Singapore, he hopes to introduce regional specialities from the countryside, which are more interesting, fresh in flavour and simple, yet delicious.

Diners can experience Chef Ishizuka’s creations at Nadaman during the following hours:

Lunch: noon to 2:30 p.m. (daily)
Dinner: 6 to 10:30 p.m. (daily)
