Island Gourmet at Island Shangri-La, Hong Kong introduces new signature ice cream cakes this summer, available from 1 July onwards.
Chef Patissier Alain Guillet has added a personal twist to this classic frozen dessert. Three different flavours include Tosca, a wicked combination of chocolate parfait, vanilla ice cream topped with colourful macaroons; Chloe, a succulent mix of cherry sherbet, pistachio ice cream with French meringue; and Arabella, caramel ice cream enveloped in sweet mango sherbet topped with coconut biscuit. “I have chosen fruits that are abundant during summer season and ingredients that are refreshing to the palate, and have combined them in a contrasting manner. The result is an irresistibly delicious selection of cakes that are perfect for this season,” Chef Alain said.
The signature ice cream cakes are made of two layers of frozen ice cream meticulously assembled and kept in a freezer to maintain the gourmet flavour and preserve its utmost freshness. The cakes are two pounds and priced at HK$560 each.
Chef Alain Guillet joined Island Shangri-La, Hong Kong in 1992 as chief pastry chef. Since then, he has created over a hundred cakes and pastries, including Island Gourmet’s best sellers Raspberry Mille-Feuille, Frou Frou, Mozart and Paris Brest. Prior to joining Island Shangri-La, Chef Guillet worked at Regent of Bangkok Hotel in Thailand, and various restaurants in France.
