Chef Glen Robert Launches “From Farm To The Table” Dishes
Surabaya, 1 November 2016 – The hotel’s executive chef, Glen Roberts, recently launched his new creations, “From Farm to the Table”, in support of the ‘Rooted in Nature’ initiative, which is in line with the hotel’s strong commitment to sustainability goals.

Farm-fresh vegetables and seasonal and sustainable ingredients are the essence of Chef Roberts’ latest creations at Portofino.  He sources vegetables direct from the Batu Farm for Shangri-La and seafood from sustainable sources.
“Shangri-La is committed to promoting greater traceability and transparency of where our food sources come from by working with local and sustainable providers,” said Chef Roberts.  “Through the Rooted in Nature dining experience, we invite guests to join us in embracing and celebrating the benefits that sustainable food brings us.”


Diners can enjoy his creations from a selection of three a la carte menus.  They can begin with Asparagus Risotto with Baby Carrots and Parmesan Cheese, have the main course of Rack of Lamb with Roasted Baby Orange Pumpkin Potatoes and Steamed Broccoli, followed by “Batu” Farm Roasted Vegetable Pizza.
