Shangri-La Hotel, Beijing Presents Azur by Mauro Colagreco, A Precision Taste of Michelin-Starred Gastronomy

Beijing, 29 July 2016 – Shangri-La Hotel, Beijing introduces AZUR by Michelin-starred Chef Mauro Colagreco, an original fine-dining restaurant, featuring authentic and creative French Riviera cuisine. Guests will experience the unique way Chef Mauro interprets produces, defining inventive contrasts between savours while enjoying his creations, which are a symbol of freedom and inspiration.
Azur originates the colour of lapis lazuli, a precious stone that could have been a morsel carved out of the Riviera’s sky or the ocean waves, comforting the mind and soul with peaceful balance. The restaurant’s Chinese name “聚”derives from Chef Mauro Colagreco concept: “a meal is an event in which you share your life, your smile and your food.”
The chef chooses to magnify his cuisine through essences and flavours of the south of France to graceful yet genuine dishes without frontiers, embracing land and sea, herbs and flowers, bitter and acid tastes. For instance, guests will explore flavours of citrus, purple cauliflowers, scallop and radish flowers with aged balsamic vinegar. His dishes revived the simple enjoyments of friendship and the spirit of “Cote d’ Azur” festive dining gathering by the seaside.

Supervised by the world-class chef and finished with an elegant and comfortable main dining area and Shangri-La’s Valley Wing lobby at the door, AZUR by Mauro Colagreco is good for both business gatherings and get-togethers with families and friends.
Signature dishes include French Gillardeau Oysters, Shallot Whipped Cream and Williams Pear Declination, The Forest: Quinoa Risotto, Mushrooms, Potato, Parsley Foam, Naranjo en Flor, Saffron Cream, Orange Sorbet, Almond Foam and much more.

About Mauro Colagreco
Italian-Argentine Chef Mauro Colagreco grew up in a family where fine cuisine always plays a part in the atmosphere. Having travelled widely to savour various culinary traditions and worked with renowned restaurateur and chefs, Chef Mauro established his own restaurant, Mirazur, in Menton in 2006 and was awarded his first Michelin star after just 10 months of opening. In 2009, Mirazur became one of the World’s 50 Best Restaurants recipients in San Pellegrino. In 2012, Chef Mauro was awarded his second Michelin star.
