Chefs Reminisce Their Mother’s Recipes at Shangri-La’s Mactan Resort & Spa, Cebu

Mother’s Day at Shangri-La’s Mactan Resort & Spa, Cebu is made extra delightful as the chefs recreate the hearty flavors of their childhood by preparing favorites from their first playground – mom’s kitchen. This heartwarming selection will be available at Tides, Tea of Spring, Acqua and Cowrie Cove on May 14.
 
On top of an array of international options, all-day dining Tides highlights creations inspired by the moms of Sous Chefs Alvin Lee and Zenaida Amaca, and Pastry Chef Laurence Cuesta, especially for the occasion. 
 
Chef Alvin brings a taste of Korea as he serves traditional noodles just as how his mother made it when he was a child, while Chef Zenaida reminisces the warmth of home as she presents her mother’s rendition of Lumpiang Sariwa (Fresh Lumpia), Kare-Kareng Baka (Beef Stew), Chicken Tinola (Chicken Soup) and more. Chef Laurence then completes the feast with an Angel Cake, one of the first pastry recipes his mother shared with him. 
 
The Mother’s Day lunch and dinner buffet at Tides is priced at PHP2,500 net per person.
 
Chinese Sous Chef Boon Bun Hoe from Malaysia, shares his country’s culinary treasures as he unearths his mother’s recipe of Bak Kut Teh (Pork Stew with Traditional Herbs). It will be available at Tea of Spring exclusively for the day at PHP750++ per order.                         
 
The rich aroma of Spanish cuisine takes over Cowrie Cove as Michelin-experienced Executive Sous Chef Daniel Quintero looks back on how his mother’s cooking enamored him to be a chef. Cowrie Cove’s Mother’s Day set menu includes specialties such as Saffron Rice with Chicken and Squid, and Octopus Salad with Potato and Spanish Pimentón. The set menu is priced at PHP1,300++ per person. 
 
Cooking is an important part of Italian culture and in Chef Andrea Burzio’s home, it was his mother who first taught him how. For Mother’s Day, Acqua offers the La Cucina di Mamma set menu that includes Ox Tongue in Parsley and Vinegar and dessert fondly named after the chef’s mother, Mousse al Cioccolato di Mamma Anna. The set menu is priced at PHP1,100++ per person.
