Relish the authentic fare from the city of Nawabs – Lucknow, meticulously crafted by our team of Chefs at our all day dining restaurant for dinner.

“Awadh” is the ancient name of the modern day Lucknow. Known for its distinct flavours, these age old recipes of the bawarchis and rakabdars of the Mughal dynasty of Awadh is what forms the centre stone of Lucknowi cuisine. Awadh has been greatly influenced by Mughal cooking techniques, and Lucknow cuisine bears similarities to those of Persia, Kashmir, Punjab and Hyderabad.The bawarchis and rakabdars of Awadh gave birth to the dum style of cooking or the art of cooking over a slow fire, which has become synonymous with Lucknow today.

The hotel’s Executive Chef Darren Conole along with Chef Anwar visited the city of Lucknow to research, learn and understand the diverse history of the origin of the cuisine,

Our team of Chefs will demonstrate the authentic style of cooking at live counters such as the use of live sigri, ulta tawa and, mahi tawa amongst others to highlight culinary skills reminiscent of Awadh.

At “DAWAT - E- AWADH, guests can embark on a gastronomic journey and indulge their palates in a diverse selection of vegetarian and non vegetarian offerings, each day of the festival. Guests can relish traditional starters such as Kebab - e -Kalmi, Hara Dalcha Kebab, Dal ka Lucknawi Shorba, Kacche Aam ki Macchi, Gosht Shammi Kebab, Awadhi Lamb Chops, Paneer Kakori Seekh, Aloo Nazakat and Paneer Peshawari Tikka amongst others. Main courses include Gosht Biryani, Murgh Shabnami, Mushroom Roganjosh, Fatmi Raan ki Biryani, Gosht Nargisi Kofta, Bharwan Pomfret masala, Jhinga Tak - a –Tak, Shiraji Murgh, Paneer Long Lata, Masaledar Urad vadi, Kathal Waala Pulao, Mushroom Roganjosh, Gulnar Biryani and many more sumptuous delights.

To complete the feast, guests can indulge in traditional desserts, such as Sabu Dana Phirni, Shehad wala Murgh, Sheer Khurma, Anjeer aur Badam ka Halwa, Chenna Malai Kheer, Suji aur Makki ka Halwa. 

Awadhi food does not use over a hundred spices, but uses only a handful of uncommon spices. The slow-fire cooking enables the meat to absorb its juices. In addition to the major process of cooking food in Awadhi style, other important processes, such as marinating meats, contribute to the taste. This is especially the case with barbecued food that might be cooked in a clay oven or over an open fire.

The richness of Awadh cuisine lies not only in the variety of dishes, but also in the ingredients used like mutton, paneer and rich spices including cardamom and saffron.

Served for dinner, the buffet is priced at Rs2,100 plus taxes and kids buffet is priced at Rs1,099 plus taxes. Cafe Uno also offers a bucket of 4 pints of foster at Rs. 1000 plus taxes during the dinner buffet.
