The centrepiece is the Pardoo Wagyu ribeye, sourced from the pristine Pilbara region of Western Australia. Raised across vast landscapes, Pardoo Wagyu is prized for its exceptional marbling, melting texture and remarkable depth of flavour.
Alternatively, Portoro grain-fed beef (MB4+) from Yambinya Station in southern New South Wales offers a consistent, balanced profile and exceptional tenderness.
Finished with crisp frites, a fresh green salad, and classic accompaniments including Red Wine Veal Jus, Pink Peppercorn or Green Herb Butter, each element is designed to complement the natural character of the beef.
