Dennis Huwae (Head Chef at restaurant &SamhoudPlaces, 2 Michelin Stars, Amsterdam)

Chef Dennis Huwae is a Dutch star chef with Moluccan Islands roots. During the first 12 years of his youth, he suffered from an allergy that reduced his choice for food in such a way, that he lived only on cheese sandwiches.  Very often at family mealtimes he found himself surrounded by the incredible smells and beauty of the food (ricetables) prepared by the womenfolk of the family. Additionally, he was inspired by watching his father through the window of the restaurant kitchen where he worked. Influenced by these memories and a life changing discussion with his father, he decided to become a chef at the age of 16.

Douglas Tay (Chef de Cuisine at Osia Steak & Seafood Grill, 1 Michelin Star, Singapore)

Chef Douglas Tay embarked on his culinary journey at a young age of 17, and has since accumulated 20 years of culinary experience. In his early career, he won several gold medals at the Culinary Olympics (also known as International Kochkunst Ausstellung or IKA) and WA Oceanfest 2009, clinched second place at the World Association of Chef’s Societies (WACS) Global Chefs Challenge’s Asia Finals in 2009, and was a nominee at the2008 Hospitality Asia Platinum Awards (HAPA) for Most Passionate Western Cuisine Chef.

Christopher Millar (Executive Chef at 1-Altitude restaurant, Singapore)

Executive Chef Christopher’s culinary career includes positions at award-wining, iconic restaurants in London, Melbourne and Sydney. In Melbourne, he was appointed Executive Chef at the legendry Windsor Hotel, and two years later as the Executive Chef of the prestigious Pavilion on the Park in Sydney. Both restaurants were awarded one Chef’s Hat by the Age Good Food Guide and Sydney Morning Herald Good Food Guide respectively. Moving to Singapore in 2003, Christopher helmed the kitchens of The Fig Leaf and Poppi, achieving 10/10 in Tatler Singapore’s Best Restaurant Guide. His menu takes diners on a modern gastronomic journey, where each dish focuses on one star ingredient’s flavours and textures that tell its own unique story.

Jair Chavez (Chef de Cuisine at 1515 WEST Chophouse & Bar, Shanghai)

The man in-charge of the kitchen and the fate of your steak. A Mexican, American – "A sweetheart" that's what the ladies in the media say. Trained in the culinary arts and molecular gastronomy, Jair's passion for the art of cooking came as no surprise, growing up in a family of chefs. Interestingly, before Jair designs his dish, he sketches it out on paper first. Both aesthetics and taste is equally important. "Your mind decides if the dish is tasty or not just from processing how visually enticing it looks", he says. Chef Jair is a rising star in the Shanghai culinary scene, having entered top 10 of the prestigious San Pellegrino Young Chef China Awards 2016 and was awarded Most Popular Young Chef on the awards night. Under the helm of Chef Jair, 1515 WEST Chophouse & Bar received a recommendation by the newly launched Michelin Shanghai 2016 Guide.
