Authentic Italian Classics at Shangri-La Boracay's Rima: From Mamma Ria, With Love

Rima, Shangri-La’s Boracay Resort & Spa’s fine dining treetop restaurant, will treat guests to a heart-warming pop-up dining experience entitled “From Mamma Ria, With Love,” featuring homemade classics of Southern Italian fare by guest chef Maria Matera Carbotti, better known as Mamma Ria, on November 24 and 25, 2016.

A housewife, mother of four, and a known passionate cook in the Carbottis’ Italian household, Mamma Ria has done several pop-up dinners in some of Singapore’s upscale restaurants, where her son, Chef Andreano Carbotti, is based.

Along with Mamma Ria is her husband, Michelangelo Carbotti, who will also be present as the wine sommelier; he holds a master sommelier diploma and has over a decade’s experience as a wine specialist.

The Carbottis come from Puglia, a region in southern Italy, known for the beautiful weather, ancient farmland and a seemingly never-ending Mediterranean coastline. The region is famous for durum wheat, which when ground, produces semolina, the base for pastas. Using the best ingredients from this region, Mamma Ria will present Italian classic dishes such as Orecchiette con salsiccia e cime di rapa (handmade pasta with sausage and rapini); Cavatelli ai frutti de mare (handmade pasta with seafood) and Riso, patate e cozze (baked rice, potato and mussels).

Orecchiette: Means “little ears” and comes from Apulia in Southern Italy. It is typically served with a tomato-based sauce.

Cavatelli: Literally meaning “little hollows” is shaped like miniature hot dog buns.

Risotto: Believed to have been introduced by the Arabs in the Middle Ages, Italy’s short-grained rice is comfort food at its best and incredibly versatile in pairing with other ingredients.

Guests may also enjoy Rima’s classic Mediterranean favourites or avail the five-course degustation dinner menu by Chef Omar Ugolleti, priced at Php 4,200++. For reservations, email or call (+63 36) 288 4988.
