Sushi was introduced in three different waves— the first wave, Edomae served with soya sauce and wasabi and the second wave Aburi, flame-torched and served with a lightly seared top, which gives it a unique taste and flavour. This year, Executive Japanese Chef Wataru Hikawa features his hand-crafted sushi creations and presents third wave sushi served with lemon and the finest sea salt from the Abyss of Okinwa.
