Shangri-La’s Mactan Resort & Spa, Cebu Launches Signature Creations At Tides

Cebu, Philippines, May 16, 2018 – Shangri-La’s Mactan Resort & Spa, Cebu launches its latest signature creations at all-day-dining restaurant Tides, highlighting a rich fusion between international flavors and locally sourced ingredients, especially prepared by Chef de Cuisine Rizki Wijatmoko.

At the Japanese station, the team provides an unexpected twist to the typical sushi by adding tabliya or native cacao. The Sushi Tiramisu is torched tableside, adding a smoky nuance to its many subtle layers of flavor.

The Western station offers the Salted Egg Pasta, a zestful combination of Aglio Olio and salted egg, showcasing a blend of Italian and Asian piquancy.

Over at the Korean station, the chefs add a creative touch to one of the popular Korean dishes, the Bulgogi. Placed inside a crispy bun and with kimchi, the Tower Bulgogi Sandwich is an appealing crowd pleaser.

New items also make an appearance among Tides’ increasing Indian, Indonesian and Malaysian offerings, a boon for adventurous diners. The Indian Cigar is a masala wrap served with two kinds of sauces, the raita and mint chutney, and is accompanied by a colorful burst of spices.

Meanwhile, Indonesia’s traditional rice course is reinterpreted as Nasi Goreng Martini, which features an ample portion of the famed fried rice in stylish martini glasses. Guests can also have a taste of Peranakan cuisine with Laksa, a popular spicy rice noodle soup topped with chicken, prawn or fish.

At the Filipino station, the team has put together the classic Pork Humba, a sweet and savory pork belly dish. An undeniable local favorite, it is served in a cooking pot reminiscent of ordinary home kitchens.

A welcome addition to the dessert station is the luscious Vanilla Parfait and Mango Flambé. The French original is made with Cebu’s sweet mangoes and garnished with a handful of edible flowers from the resort’s own gardens.

With fresh and unique flavors from around the world, Chef Rizki’s new selections will breathe new life into the Tides buffet.
