The Red Chamber Updates Menu with Fresh Tastes of Northern China

The Red Chamber of China World Summit Wing, Beijing continues to surprise lovers of northern Chinese cuisine with a refreshed menu of new dishes. The contemporary restaurant will also still serve its Signature Peking Duck, roasted using special date wood, with warm, efficient and fuss-free service.


Highlight 1: Introduction of 20 new dishes
The new menu features almost 20 new dishes, most of them boasting ingredients and flavours of northern Chinese cuisine. In addition to existing popular dishes, guests can also enjoy new creations, such as Marinated Eggplant with Garlic, Traditional Braised Pork Intestines with Garlic and Deep-Fried Chicken. New additions in the cold dish and dessert sections include Roasted Cauliflower with Black Truffle Sauce and Yin Yang Black Sugar and Pumpkin Rice Balls. The new menu will boast a total of almost 100 dishes and beverages.

Highlight 2: A Reflection on Tradition and Familiar Tastes
The new dishes reflect not only creativity, but also the culinary team’s thoughtfulness. Guests can enjoy in the new menu a traditional local dish that is no longer commonly found in restaurants – Stir-Fried Dough Drops with Beef and Vegetable. Handmade dough drops are fried with diced beef, cucumber, fresh mushroom and carrot for a flavourful dish with an addictive crunch and texture.

Highlight 3: A Fusion of Research and Creativity
One of the notable new dishes is the Braised Sturgeon Tendon with Turbot Fish, an original creation by the culinary team after careful research and trial. Low in fat, sturgeon is rich in minerals, such as protein and omega-3. Only tendon from sturgeon reared for around 10 years is used. It is believed that sturgeon meat helps alleviate back and gastric problems, as well as hair loss problems.

Highlight 4: Careful Engineering of Menu
With the introduction of the traditional Peking Duck and more northern Chinese dishes in the menu last year, guests have given positive reception and feedback. Changes in the menu lean towards using regional ingredients and cooking methods to enhance the restaurant’s northern Chinese culinary focus. The current menu has been in use for the past six months. In this menu revamp, the culinary team improved the menu by considering guests’ feedback. Dishes that are not as popular were removed and fresh dishes that lean towards the popular taste were added to continuously provide guests an interesting dining experience.

Careful thought and planning go into each menu change and the whole process takes about six months – from conceptualising, market research, tests in the kitchen, hotel management tasting to the development of new menus.

Highlight 5: Signature Peking Duck
Although The Red Chamber will continuously improve its menu, guests will always return for the Signature Peking Duck, roasted with special date wood and supervised by Chef Yuan Chaoying, a Beijing cuisine executive chef and Roast Duck expert of Shangri-La Hotels and Resorts. Carefully selected ducks are prepared to produce flavourful skin with an addictive crunch and meat that is moist, tender and flavourful.

The new menu is offered for lunch from 11:30 a.m. to 2:30 p.m. and for dinner from 5:30 to 10 p.m. Set menus are also available, as well as four private dining rooms. Service charge will not be applied to the prices.
