As the first hotel in Sydney to join the beekeeping movement, the apiary initiative raises awareness of the importance of bees within the ecosystem and Shangri-La Sydney’s commitment to preserve the environment.
The Rocks precinct has proven to be the perfect playground for the Shangri-La bees. The urban colony yields a unique flavour of honey due to the exotic collection of trees and flowers, and the hotel’s vicinity to Sydney’s Royal Botanic Gardens.
With eight beehives on the hotel’s level three rooftop, the raw honey is naturally harvested and hand-spun without heat treatment.
Partnering with The Urban Beehive, the hotel’s colony of bees average over 50 kilograms of honey per year, producing 2,700 kilograms since the commencement of the initiative.
The hotel-made liquid gold provides patrons with a hive to table experience and the unfiltered honey can be purchased by guests.
