Since his childhood Chef Furuya has always been curious about cooking, and began his culinary journey with French cuisine as he worked amongst the restaurants and hotels in his native Kanagawa prefecture. This culminated in his eventual rise to the position of Chief Chef at The Westin Tokyo in 2010. At Shangri-La Tokyo he found a new love in Italian cuisine under the stewardship of a former Chief Executive Chef from Piemonte, Italy.

Chef Furuya’s philosophy touches both tradition and innovation. He often visits local farms to carefully pick ingredients that will offer an array of tastes that blend together harmoniously on the plate and remain pleasing to the eye.
