Chef Alessandro Delle Cave

Italian native Chef, Alessandro Delle Cave helms the Trapizza kitchen, bringing authentic flavours of Italy to the table. Chef Alessandro grew up in the city of Turin, famous for architecture and cuisine, and sharpened his knives in various Italian establishments in Italy, Sydney and Singapore.

Chef Alessandro imports premium ingredients from Italy, as his cooking philosophy stems from the belief in using authentic and fresh ingredients to create the right flavours. With pasta and risotto as his specialty, he has elevated the flavours of signature items and conceptualized new dishes reminiscent of those from his hometown in Northern Italy, including Lamb Ravioli, Arancine alla Bolognese and more.
