Chef Masahiro Ogawa has more than 25 years experience as an expert in sushi. Classically trained in the traditional art of sushi-making, the 46-year old chef is something of a purist, but he is open to experimenting with new styles and catering to people unfamiliar with a dish, in order to help them embrace it.
