Chef de Cuisine Jeremy Biasiol
Born in Lyon, France, Chef Jeremy has over 11 years of experience working under the instruction of some of the most prominent names in French gastronomy, including Paul Bocuse, La Mere Brazier and Alain Ducasse. Much of this experience came from working at Alain Ducasse's 3 Michelin-starred establishments at Plaza Athénée Hotel in Paris and Essex House. Prior to joining Pudong Shangri-La, East Shanghai, Chef Jeremy was Executive Chef and co-owner of Mirror Restaurant in Hong Kong, where he led the restaurant to earn 1 Michelin star in 2012 and 2013, and many other notable accolades. Chef Jeremy’s philosophy of respecting fresh produce is seen in the way he brings out the natural flavours of each ingredient with minimal fuss while incorporating his signature style gathered from his international experience and travels around Asia.
