il Forno, the Italian restaurant at Shangri-La Hotel, Guangzhou, will bring the authentic culinary heritage of Italy to local gourmands again. From 16 to 18 May 2013, one Michelin-starrred Italian guest chef, Andrea Spagoni, will indulge a lucky few with a degustation dinner menu. To make sure the dining experience stands out, dinner will be paired with premium Banfi wine selections. Guests also have the opportunity to recreate the culinary marvels at their own home because Chef Andrea will host cooking demonstration classes daily during his stay.
A partner and executive chef of Ristorante Pier Bussetti al Castello di Govone, an acclaimed Michelin-starred restaurant in Italy, Chef Andrea specialises in Piemonte dishes and cutting-edge experimental cuisine. His extensive experience and expertise were gained at some of the world’s most renowned restaurants, in particular, the famous NOBU in New York and Rossini in Florence, where he cooked for such celebrities as Mick Jagger, Jennifer Lopez, Penelope Cruz and Grenyth Paltrol.
The five-course degustation dinner by Chef Andrea kicks off with Duck Terrine, Apple Cider, Caramelised Apple and ‘Fake’ Mustard Mayonnaise, a succulent and refreshing starter. This is followed by White Asparagus Vellute, Smoked Egg Yolk, Pancetta, Liquorices Cookie and Sichuan Pepper, and homemade Ravioli and Black Bamboo with Ricotta Cheese and Sea Urchin Sauce.
The wild taste of black bamboo perfectly matches the briny flavour of sea urchin and aroma of ricotta, allowing an unforgettable aftertaste in mouth.
For the main course, guests may choose from Prime Beef Tenderloin, Crushed Potato with Mascarpone and Black Truffle or Pan-fried Grouper, Carrot Puree, Yogurt and Aromatic Sprouts. Finally, Apple Crumble, Fondant Chocolate Mousse and Amaretto, a sweet take on traditional dessert, will be served for dessert.
The degustation dinner menu with Banfi wine pairings is available for Rmb786++ per person. The entrance fee for the cooking demonstration class is priced at Rmb350++ per person, which includes two recipes and a four-course lunch. After the promotion period, Chef Andrea’s creations will still be available for another two weeks at il Forno, while he coaches the chef teams at the restaurant in the preparation of his recipes during his stay.
Led by Chef Antonio Tardi, il Forno at Shangri-La Hotel, Guangzhou offers authentic Italian cuisine in a Western dining setting for guests. The fundamental philosophy of the restaurant is well reflected in the venue and in the quality ingredients, genuine flavours, aesthetic presentation and tasteful design on the plates.
