Hot & Spicy Beef Short Loin


  • 500g beef spare ribs
  • 50g celery
  • 50g leek
  • 50g shallots
  • 50g garlic
  • 40g spicy soup stock
  • 10g dark soy sauce
  • 8g oyster oil
  • 500g beer
  • 10g aniseed
  • 50g crystal sugar


  1. Marinate the beef spare ribs with chopped vegetable, yellow rice wine and soy sauce for at least 3 hours.
  2. Quick fry the beef spare ribs.
  3. Stir fry the rest of vegetables, soup stock and simmer for 90 minutes until the meat is loose from the bone. Soak overnight.
  4. Drain the beef from the broth. Cut into shape and place the meat in a dish.
  5. Thicken the broth with starch and pour onto the beef.
  6. Garnish with a few slices of deep-fried ginger and mint leaf.
