Ingredients (serves 10)

  • Cheesecake sous vide
  • Pistachio and caramel peanut crumbles
  • Rum strawberries
  • Goat cheese ice-cream
  1. Put all items on a serving plate.

Ingredients for cheesecake sous vide

  • 750g cream cheese
  • 500g mascarpone
  • 190g sugar
  • 2 pc lime zest
  • 1 pc lime juice
  • 200g eggs
  • 250g sour cream
  1. Blend all ingredients together in a mixing bowl, adding the eggs one at a time.
  2. Pour mixture into a baking tray, pre-heat oven at 86ºC and bake sous vide for 1 hour.
Method for pistachio and caramel peanut crumbles
  1. Combine pistachio and caramel peanut crumbles together.

Ingredients for rum strawberries

  • 100g strawberries
  • 50g sugar
  • 1pc vanilla pod
  • 30g rum
  1. Caramelize the strawberries with the sugar in a pan.
  2. De-glaze with the rum-vanilla.

Ingredients for goat cheese ice-cream

  • 1500g vanilla ice-cream
  • 500g goats curd
  1. Churn the ice-cream.
  2. Add the goat cheese in chunks while dispensing.

Method for plating

  1. Arrange the rum strawberries in a half-ring on the plate.
  2. Place the other half-ring made with the pistachio and caramel peanut crumbles.
  3. Fill two cones with cheesecake sous vide and arrange.
  4. Scoop a nice quenelle of ice-cream.
