Shangri-La Hotel, Singapore’s team of pastry chefs has created our own rendition of the coveted bever-age in the form of a Bubble Tea Lava Cake.
Layers of Earl Grey Japanese sponge cake sandwich 64% Manjari chocolate-infused tea ganache to form the familiar fragrant flavours of milk tea. The cake is topped generously with mascarpone cheese chantilly cream which emulates the smooth mouthfeel of the beverage. Evidently, a copious amount of chewy gula melaka pearls complete the bubble tea-inspired delight.
