Sustainable Gastronomy

Bake House holds a sweet and savoury collection of delights that are all-natural, trans-fat-free, and refrain from using artificial dyes and flavourings. Since its opening in 2019, Bake House's restaurant philosophy is grounded on a commitment to reducing waste and its carbon footprint and focuses its efforts specifically on reducing food waste and single-use plastic packaging.

On the other hand, Samba reinforces its commitment to sustainably sourcing ingredients and fresh produce in partnership with local providers, and Raging Bull Burgers prides itself on the practice of nose-to-tail butchery.

It is our joy to share that the hotel utilises eggs from cage-free hens. As we hold ourselves to high standards and are also committed to food safety, using cage-free eggs promote better animal welfare and better quality products. While others may express that this practice carries a slight price premium, we believe that the benefits of sustainability are well worth it.

We are also proud to be a part of Rooted in Nature, Shangri-La Hotels and Resorts' culinary and sustainability initiative. With this endeavor, we hope to provide environmentally friendly menu choices for our guests while supporting local producers. Diners can identify Rooted in Nature menu items by spotting the pea shoot logo beside the dish description. Through these sustainability efforts, we hope to deepen our relationships with our local communities, support markets for sustainable farming, fishing, and livestock practices, and overall bring higher quality cuisine to our guests.

Going Green

As part of a water conservation commitment, Shangri-La The Fort encourages guests to hang bath towels they intend to reuse. Similarly, guests may choose to use bed linen more than once. To replace a change of sheets, simply place the environmental card on top of the bed.

In addition, Shangri-La The Fort, Manila is actively eliminating single-use plastics hotel-wide by replacing bottled water in plastic containers with glass water bottles, and replacing plastic utensils with starch-based alternatives.

The property is proud to be LEED Gold certified for its best practices and design. The building features double-glazed glass walls and practices greywater recycling system, which reuses water for landscaping and toilet flushing, to name a few.
