Big Bay Café elevates durian buffet to new heights as durian will be integrated into multinational cuisines for the first time, showcasing a variety of amazing durian-infused dishes in each kitchen area.
Guests can begin the durian feast with Thai-style Durian Green Mango Crab Salad. Fresh crab meat is combined with refreshing green mango and rich flavour of durian to awakens guests’ palate. The culinary journey continues with the Durian Curry Seafood Pot, where plump tiger prawns and mussels are simmered in an aromatic curry base infused with durian's richness to create a delightful balance of spiciness and sweetness. Slow-Grilled Pork Ribs are glazed with signature durian barbecue sauce to deliver caramelised succulence, with their smoky tenderness perfectly balanced by the sauce's sweet-savoury harmony.
Following these savoury masterpieces, guests must not miss a collection of irresistible desserts made with seasonal durian. Indulge in the crisp golden shells of Durian Crispy Fried Milk, Durian Puff Pastry and Durian Sago Pudding. And continues with the decadent Durian Cream Puff, Durian Crème Brûlée, Durian Flan and Sticky Rice with Durian Coconut Sauce.
