This season, Calypso Restaurant & Lounge at Jing An Shangri-La, Shanghai unveils its Spring A La Carte Menu. Crafted by hotel’s Italian Executive Sous Chef, Tonino Giglio, the refreshed menu draws inspiration from the natural and light flavours of Italy, Spain and the South of France. By combining these influences with the finest seasonal ingredients, Chef Tonino presents a culinary journey designed to awaken the senses and mark the opening chapter of spring.
The menu showcases an array of vibrant spring ingredients such as zucchini, asparagus, green peans, and fresh seafood, with nearly twenty Mediterranean-inspired creations. Signature dishes include Grilled Zucchini Rollups Stuffed with Lemon-Basil Ricotta, Garden Salad, Velouté of Asparagus, Honey and Garlic Glazed Salmon Fillet with Zucchini Purée and Fermented Lemon, and a refreshing Lemon Mousse with Green Tea Almond Crisp and Lemon Sorbet. Among the standout selections are the Bluefin Tuna Tartare, paired with avocado pesto, yuzu gel and stracciatella mousse for a bright and refined start; and the Roasted Lemon Chicken, featuring tender Qingyuan chicken marinated with Mediterranean herbs and lemon, served with Brussels sprouts and roasted baby potatoes.
Meanwhile, the pasta and pizza menu embrace seasonal notes as well. The distinctive southern Italy Puccia is crafted with wheat flour, soy flour, rice flour and extra virgin olive oil and baked for a traditional thin crust flat bread, stuffed with various ham, vegetables and cheese. The Handmade Tagliatelle is made in two colours, which enriched with goose gizzards, duck ragout and porcini mushrooms delivers generous richness. The Salmon Ravioli, Asparagus Risotto and Seafood Calamarata present refreshing and satisfying spring flavours.
