With over 28 years of experience honed in Tokyo, Shanghai, and Hong Kong, Chef Tsuji, heir to a storied culinary lineage, transforms premium ingredients into edible masterpieces through meticulous techniques, elegant plating, and harmonious flavors. His innovative vision elevates each dish, from intricate Kaiseki to vibrant Teppanyaki, reflecting an unwavering commitment to culinary excellence.   

“Seasons Unfold, Senses Ignite” engages sight, sound, touch, taste, and aroma in a seamless symphony. Guests savor vibrant flavours, including the delicate sweetness of summer’s finest fish—such as Ishigakidai, Isaki, Ayu, Hamo, and Suzuki—sourced exclusively from Japan’s pristine coastal waters for Chef Tsuji. These seasonal treasures, at their peak, shine as sashimi with house-crafted soy sauce and premium wasabi or pair exquisitely with Nadaman’s signature sushi rice, prepared using a distinctive recipe and premium vinegar. Carefully selected beverages, from fine sake to delicate teas, complement each course, while tranquil music and sophisticated aesthetics evoke Japan’s cultural essence.   

Chef Tsuji’s Kaiseki menus embody warm hospitality, thoughtfully tailored to the season and individual preferences.
