From 17 to 19 September 2025, Restaurant Petrus presents an intimate four-hands dinner celebrating the artistry of two Michelin-acclaimed chefs. For three exceptional evenings, Chef Uwe Opocensky and Chef Frédéric Chabbert reunite to honour their shared history and passion for French cuisine, creating a menu where classic refinement and contemporary innovation meet against the backdrop of Hong Kong’s most elegant dining room.
Chef Frédéric Chabbert, who led Restaurant Petrus for eight years before establishing the Michelin-starred Restaurant Dôme in Antwerp, returns with a philosophy that has grown more minimal and precise over time. He will present his celebrated Pomme Soufflée au Caviar. This dish embodies his belief in restraint: one pristine product, refined with subtle accents so that flavour and memory take centre stage.
Chef Uwe Opocensky, Executive Chef of Restaurant Petrus and a visionary shaped by both El Bulli and Hong Kong’s dining landscape, creates with a bolder, more contemporary spirit. His featured dish, Carre de Veau, showcases milk-raised Limousin veal cutlet from Huguenin, served with Yunnan matsutake mushrooms baked in salt crust, Pommery mustard sauce, and velvety mash. This composition blends tradition with innovation and highlights his devotion to rare seasonal treasures.
This exclusive collaboration also celebrates iconic French products such as Prat Ar Coum oysters and the pigeon d’Eneour, interpreted with the chefs’ complementary approaches: Frédéric’s clarity and restraint, Uwe’s modern flair. Together they echo the duality both chefs value — dishes that feel at once familiar and surprising. The Four-Hands Dinner is offered as a six-course menu at HK$1,988 per person or an eight-course menu at HK$2,588 per person, with seating beginning at 6:30 pm each evening.
