Black Truffle (Manjimup / White Corn / Chicken Jus): Sourced from Australia’s Manjimup Truffles, founded by Al Blakers in 1994, this dish reflects Chef Uwe’s 18-year collaboration with the grower. The luxurious “black gold” truffles are paired with Hokkaido sweetcorn, a velvety slow-cooked egg yolk, and a hint of sherry vinegar. Available à la carte (HKD 488) and in the set dinner.
Artichoke (Lavender/ Chocolate/ Ice cream): A striking dessert, shaped like an artichoke, blends earthy artichokes with 75% dark chocolate from Hong Kong’s Conspiracy Chocolate. Accented with local Assam lemon, honey lavender ice cream, and extra virgin olive oil from 1000-year-old trees, it’s a centrepiece of the set dinner.

Starting June 30, the Summer Lunch Menu features Chef Uwe’s fresh summer salad with sweet Cantaloupe melons from Tuscany with Iberico ham and a range of refreshing vegetables like Sorrel and Rocket with a hint of 25-year aged balsamic. Priced at HKD 688 per person for 3 courses, with a Sommelier Selection Wine Pairing from HKD 600 for 2 glasses.
