Chef Simon Davies, former Executive Chef of the prestigious three-Michelin-starred Alinea in Chicago, joins forces with Chef Uwe Opocensky of Petrus to craft an innovative 8-course menu that elevates fine dining into a captivating artistic experience.
This unique collaboration celebrates culinary heritage as a universal language that bridges cultures and tells stories. Chef Davies brings his youthful energy and visionary USA culinary style, inspired by his passion for film and photography, creating dishes that are both visually stunning and richly flavorful. Chef Opocensky complements this with his dedication to sourcing the finest seasonal ingredients, enriching each dish with exceptional taste and texture. The dinner opens with an exquisite selection of canapés that preview the elaborate 8-course menu. Highlights include Chef Davies' Chicago Crab Roll with tomato, celery salt, and pickle; Hokkaido Scallop accented with coconut, citrus, and chili; and Steak Tartare topped with quail yolk and dijonaise. Chef Opocensky contributes refined dishes such as a Wild Mushroom Tart with sherry vinegar and Comté cheese, Fukuoka Fruit Tomato with burrata and pesto, and Hokkaido Sea Urchin paired with chawanmushi and sudachi. The menu flows through Hamachi with ossetra caviar, Foie Gras with autumn pear, and continues to showcase delicacies like Sablefish, Norway Langoustine, 7X Ranch Strip with maitake mushrooms, and Pigeon au sang with savoy cabbage.
