Chef Mark Dong

Chef Mark Dong is the Chinese Chef of Shangri-La Tianjin, responsible for the hotel’s signature Chinese restaurant, Shang Palace. He has more than 20 years of experience in hotel kitchens with the Shangri-La Hotels Group. In his free time, he enjoys playing sports and watching culinary shows on television.


Chef Jeremy Zhang

Shangri-La Tianjin, is known for its authentic Peking duck prepared by Chef Zhang, who was trained by Chef Yuan Chaoying, from Kerry Hotel, Beijing. Chef Zhang has been in the industry for about 20 years and is a maestro at duck roasting.

Chef Zhang uses jujube wood for roasting his ducks to enhance the delicious flavour. “Since the hotel’s opening, we’ve roasted and served more than 25,856 Peking Ducks” says Chef Zhang.
