Meet Chef Oliver Lai, the Executive Chinese Chef of Shangri-La Hotel, Tianjin, responsible for the hotel’s signature Chinese restaurant Shang Palace and the Chinese banquet kitchen. Chef Lai hails from Hong Kong – the home of Cantonese cuisine –and has a career spanning more than 35 years.
