Sautéed Shrimp and Sea Urchin with Milk and Egg White

Ingredients:

  • 320ml cream
  • 320ml egg white
  • 5g of starch
  • 3 whole shrimp
  • 20g sea urchin
  • 0.2g edible gold leaf
Method:
  • Mix and stir the cream, egg white and starch.
  • Well-heat the pan and pour the paste into it. Remove separately, within 2 to 3 minutes.
  • Blanch the shrimp with boiled water and put them on the fried milk.
  • Place sea urchin and garnish with edible gold leaf.
