Executive Chinese Chef Ip Chi-kwong from Hong Kong has over 40 years of experience. He leads the culinary team on a mission to redefine Cantonese cuisine.
Chef Ip stepped into the culinary world at the age of 15. Prior to his arrival in Taipei, Chef Ip worked in Hong Kong, Malaysia, Singapore and many cities in China.
According to Chef Ip, the most important lesson he has ever learnt, and continues to teach is "to care for details of every aspect throughout the entire preparing and cooking procedures to ensure that every dish is presented at its best."
Chef Ip tastes the superior broth prepared on a daily basis, because he says the broth is a vital element in Cantonese cuisine, and it requires a lot of attention and effort to ensure its quality.
