Executive Chinese Chef Tam Kan Tong
Chef Tam Kan Tong entered the professional
culinary world when he was 15 years old. In the past 43 years, he has worked
in Singapore, Seoul, Macau and other destinations in Asia to please diners.
One of his specialities is to host large-scale events, often at state banquet
level with 500 to 1,000 guests. The most remarkable event of his career was the 10th annual reunion celebration of Macau and People’s Republic
of China with Hu Jintao, General Secretary of the Central Committee of the
Communist Party of China, as the guest of honour. Chef Tam has a base of
celebrity fans including Lee Kuan Yew, former Prime Minister of Singapore and
Jackie Chan, Hollywood movie star.
“Density” is Chef Tam’s philosophy for authentic
Cantonese cuisine. It not only has to deliver a condensed flavour of natural ingredients
but also must be prepared with the perfect cooking heat. With his seasoned
