Shang Palace

Elegant Cantonese dining with a modern décor

At the opulent Shang Palace, professional chefs from Hong Kong present fine Cantonese cuisine in a modern setting that echoes two themes - celestial clouds and the peony flower.

The elegant restaurant features a wide selection of exquisite dishes. Look forward to a wide selection of dim sum favourites, available for lunch daily, and signature dishes as well as an extensive tea collection are offered at Shang Palace.

The Tea Alley at the entrance features an assortment of traditional tea ware produced by Lin’s Ceramics Studio.

Executive Chinese Chef Tam Kan Tong

Chef Tam Kan Tong entered the professional culinary world when he was 15 years old. Over the past 43 years, he has worked in Singapore, Seoul, Macau and other destinations in Asia to please diners. He is especially adept at hosting large events and has often served state banquets with 500 to 1,000 guests. The most remarkable event of his career was the 10th annual reunion celebration of Macau and the People’s Republic of China, which featured Hu Jintao, the general secretary of the Central Committee of the Communist Party of China, as the guest of honour. Chef Tam has many celebrity fans, including Lee Kuan Yew, the former prime minister of Singapore, and Jackie Chan, the famous Hollywood movie star.

“Density” is Chef Tam’s inspiration for creating authentic Cantonese cuisine. His dishes must not only deliver the condensed flavours of the natural ingredients he uses, but also be prepared with the perfect cooking heat. With his seasoned skills and passion for culinary arts, Chef Tam creates breathtaking dishes that go beyond the limits of the imagination.
