Tiramisu Espresso

Tiramisu Espresso


  • 6 egg yolks 
  • 3 tbsp sugar 
  • 400g mascarpone cheese 
  • 200g whipped cream 
  • 1½ cups strong espresso, cooled 
  • 2 tsp dark rum 
  • 200g packaged lady’s fingers or sponge cake 
  • ½ cup bittersweet chocolate shavings  


  1. In a large bowl, beat the egg yolks and sugar with an electric mixer with whisk attachment, until thick and pale, for about 5 minutes. 
  2. Add mascarpone cheese and continue to beat until smooth. Add the whipped cream. 
  3. Pour espresso and rum into a small, shallow dish. Dip each lady’s finger into the espresso for around 5 seconds. (Note: the lady’s fingers will fall apart if they soak in the espresso for too long.) 
  4. Arrange the soaked lady’s fingers at the bottom of a glass, breaking to size if necessary. 
  5. Spread half of the mascarpone mixture evenly over the lady’s fingers.  
  6. Arrange another layer of soaked lady’s fingers and top with the remaining mascarpone mixture. 
  7. Before serving, sprinkle the tiramisu with chocolate shavings.
