“Sunny Side-Up” - Crabmeat with a Hint of Chili and a Mango Yolk Topped with Caviar
The “sunny side-up” isn’t actually made of eggs. In the dish, crab meat is substituted for the egg whites and the yolk is made from mangoes with advanced molecular gastronomy techniques.
