The new ibuki Japanese cuisine is designed by the highly experienced Japanese chef, Norihisa Maeda. Upholding the spirit of professional Japanese style for more than 30 years, he has mastered the Japanese cooking techniques of authenticity. Chef Maeda’s cooking philosophy is to trace the source and explore the depth of traditional cuisine, practising intensive skills at the same time. He looks forward to sharing these aspects with guests through Japanese food culture.

Chef Maeda has served at many well-known restaurants in Japan, Hong Kong and Macau. During his stint as chef de cuisine at MIZUMI, a Japanese restaurant at Wynn Macau, the restaurant received double glory with the two Michelin stars and a Forbes Travel Guide Five-Star rating. He will lead ibuki to becoming a star-rated restaurant with his insight into Japanese cuisine and his unique creativity.
