Set against the backdrop of one of the world’s most beautiful natural landscapes, Altitude draws on Australia’s distinct flavours for inspiration as views of Sydney Opera House and Sydney Harbour Bridge unfurl before you. 

Altitude’s menu is created seasonally by Chef de Cuisine Jason Phi Huynh and his team, with sustainability as its guiding star. Behind each, you’ll find at least one native Australian ingredient and an artisan passionate about their harvest. 

There’s the line-caught coral trout fished sustainably in Queensland; Wagyu beef from Western Australia’s Pilbara region, offering full-bodied texture; pure unfiltered honey from Shangri-La's rooftop beehives; and our blue cheese from New South Wales, made by a man who milks his own cows by hand. 

Our sommelier team has curated a library of Australian and international wines, featuring small-scale, emerging producers to rare, iconic vintages. Altitude holds a Three Glass rating at Australia’s Wine List of the Year Awards, alongside Wine List of the Year and Best Wine List in a Sydney Venue at the 2026 NSW Sommelier Wine List Awards.
