  • 450g egg yolks 
  • 350g white sugar 
  • 1kg mascarpone cheese 
  • 300g egg whites 
  • 500ml espresso coffee 
  • 500g Lady’s Finger biscuits 
  • 10g chocolate powder 




  1. Mix egg yolks and sugar into a sabayon. 
  2. Beat mascarpone slowly until smooth. Add to the egg yolk mixture. 
  3. Beat the egg whites until stiff. Pour slowly into the rest of the mixture. 
  4. Dip the lady finger biscuits into the espresso and arrange in one layer in a bowl. Pour half the mascarpone mix over the biscuits. 
  5. Repeat step 4. 
  6. Dust the chocolate powder over the top and serve.
