Crispy Pork Fillet with Red Wine served with Pear & Capsicum

Ingredients

  • 300g pork neck
  • 300g poached pears in red wine
  • 10g  balsamic
  • 10g sugar
  • 1 egg
  • 50g green pepper
  • 50g red pepper
  • 5g  ginger
  • 5g chive
  • 5g cornstarch

Method

  1. Slice the pork, dice the peppers into cubes and cut the ginger and chives.
  2. Whisk the eggs and spread the mixture on the pork. Cover the pork with cornstarch.
  3. Deep fry the pork and drain any excess oil.
  4. Stir fry the peppers with ginger and chives.
  5. Mix the deep-fried pork with balsamic vinegar, sugar and starch and fry the mixture with low heat for one minute.
  6. Cut the pears into small cubes and arrange them on the plate for decoration.
  7. Serve immediately.

Tips

  • Fry the pork until golden yellow to ensure it is crispy.
