Originally from Hong Kong, Chef Lai possesses 29 years of culinary experience. Especially adept with Cantonese cuisine, he is constantly finding new ways to innovate for traditional recipes.
His cuisine has been highly spoken of by the former Singapore Prime Minister, Lee Kuan Yew, the former Australian Prime Minister, Bob Hawke, the President of France, Nicolas Sarkozy, and the famous Italian soccer star, Roberto Baggio.
Chef Lai has garnered many awards in the course of his long career, including the "Golden Spoon Award" in 2001.
