Chef Ben Leung

Chef Leung originates from Hong Kong and has more than 30 years of culinary experience in the industry. He is well known for both his classic and modern approaches to Cantonese cuisine, seafood and Shanxi cuisine and his specialised skill of utilising Southeast Asian herbs and spices to create innovative dishes. 

His signature dishes include Braised South African Abalone in Classic Style, Crispy Golden Cups filled with Minced Deer Meat, Blanched Spotted Garoupa Fish in Consommé of Celery and White Vinegar, Chef Leung’s Minced Fish Chowder and King Prawn with Salted Egg and Water Chestnut.
