Hotel Sommelier - Julien Peros 

In late summer 2020, Julien joined Island Shangri-La, Hong Kong as our Hotel Sommelier, bringing with him experiences from various hotels and fine dining restaurants in France and Hong Kong.  Prior to joining us, he was the Chief Sommelier at Park Hyatt Hotel, Japan.   
 
Julien has organised a series of highly successful wine dinners at Restaurant Petrus, making it the ultimate place in town for premium wines and iconic wine dinners. 

 

Head Sommelier – Cherish Ho 

Cherish Ho joined Restaurant Petrus in 2018, the same year he achieved the Advanced Sommelier Certificate with the Court of Master Sommeliers. During his 8 years in the food and beverage industry, expanding his knowledge in wine has always been Cherish’s true passion.
