Chef Takatsugu Koyama

Chef Takatsugu Koyama started his culinary career in Tokyo, Japan, and has since accumulated 18 years of experience from various restaurants in Japan and Hong Kong.  

Prior to his current position as head chef of Nadaman at Island Shangri-La, Hong Kong, he was assistant chief chef at Nadaman's Akasaka Zipangu branch. Before that, he was an assistant sushi chef at Sushi Arisugawa in Tokyo, Japan.

Chef Koyama was also the assistant chief chef at Nadaman at the Imperial Hotel in Tokyo, Japan, from 2009 to 2013. His responsibilities included overseeing the catering service at the official residence of the Japanese prime minister and the official residence of the House of Representatives.

Chef Koyama is not new to Hong Kong. He was previously the assistant chief chef of Nadaman at Kowloon Shangri-La, Hong Kong, years ago.
