Lobster Tartar


  • Lobster
  • Apple
  • Lemon
  • Tomato
  • Onion
  • Radish
  • Parsley
  • Mayonnaise
  • Sea Salt
  • Pepper
  • Extra virgin olive oil


  1. Peel and dice the apple. Keep it in lemonade to maintain its colour.
  2. Poach the lobster in boiling water.
  3. Shell the lobster and keep the meat of a whole claw. Cut the rest of the lobster meat into small pieces.
  4. Peel and dice the tomato and onion. Mix the diced tomato, onion and lobster meat with the proper amount of sea salt and mayonnaise.
  5. Place the diced apple with a mould in the centre of the plate.
  6. Place the blended topping of lobster, tomato and onion on the apple, remove the mould and put the whole claw meat onto the top.
  7. Garnish the dish with shredded radish and parsley leaves. Sprinkle with some extra virgin olive oil.
