Shangri-La Hotel, Singapore’s team of pastry chefs has created our own rendition of the coveted beverage, in the form of a Bubble Tea Lava Cake.
Layers of Earl Grey Japanese sponge cake sandwich a 64% Manjari chocolate-infused tea ganache to form the familiar fragrant flavours of milk tea. The cake is topped generously with mascarpone cheese chantilly cream, which emulates the smooth mouthfeel of the beverage. A copious amount of chewy gula melaka pearls complete the bubble tea-inspired delight!
