Island Gourmet New Confectioneries

Island Shangri-La, Hong Kong is pleased to introduce Chef Julien Gourmelon as the hotel’s Executive Pastry Chef, he is going to debut his all-new delicate cake selection from 26 May onwards. Chef Julien has a wealth of culinary knowledge and has been an experienced and well-liked pastry chef for over 15 years, with previous posts at some of the finest hotels in France, the United Kingdom and Hong Kong. His first collection comprises of 12 appetising cake selections. 

With a master chocolatier and a CAP® qualification in pastry, Chef Julien oversees all the pastry, bakery and desserts across the various restaurants at Island Shangri-La including the stand-alone cake shop, Island Gourmet. His creativity and enthusiasm for pastry is evident in his unique creations, which have won him accolades and praise throughout his career.    

After months of experiments and tasting, with Chef Julien’s perfectly meticulous craftsmanship, he proudly stages his one-of-a-kind collection of confectioneries by re-defining the art of patisserie that is not only guaranteed to appeal to your taste buds but will dazzle your eyes too.    

Island Gourmet New Creations Highlights:  

Saint Honoré Mocha  

The pièce de résistance by Chef Julien. This is a puff pastry based confection with chocolate sponge cake, topped with chocolate cremeux and flawlessly piped white coffee cream, surrounded by profiteroles dipped in caramel.  

Frou Frou  

The Island Gourmet’s time-honoured signature creation with a modern twist and coated with a glossy mirror glaze. It is made up of rich chocolate mousse using 70% Valrhona dark chocolate, with almond dacquoise and crunchy almond praline which is carefully prepared in-house.   

Hokkaido Cheesecake  

Using the finest Hokkaido cheese from Japan, our sumptuous biscuit crunch based cheesecake is finished off with delicately piped chantilly cream, which gives a smooth sensation and pleasant taste to each bite.  

Clementine Mont Blanc  

Layered with almond sponge cake and with a tantalising hint of citrus from the clementine compote, the tangy chestnut mousse further creates a balanced taste for this elegantly curated cake.    

Raspberry Mille-Feuille  

One of the most classic desserts composed of layers of caramelised puff pastry, with a rich vanilla cream filling in-between and decorated with fresh raspberries on top. The entire creation brings the perfect crunchiness and sweetness to the palate.   

Mango Coconut  

A delightful treat with a combination of coconut and mango. Aromatic mango jelly, coconut mousse and exotic curd sit atop fragrant coconut dacquoise.
