Chief Patissier

Anthony Collar

Born and raised in Australia, Chef Anthony began his culinary career in 1993 and has since accumulated a wealth of experience at several five-star hotels in Australia and Asia.

He has worked at several Shangri-La properties, including those in Jakarta, Shenzhen, Shanghai and Dubai.  In addition, he has helped with a number of pre-openings at hotels at locations in China, including Guangzhou, Xian and Ningbo. Prior to joining Shangri-La at the Fort, Manila, he was the executive pastry chef at Jing An Shangri-La, West Shanghai. Before that, he was the area executive pastry chef at Makati Shangri-La, Manila.

Chef Anthony moved to Hong Kong to join his first Shangri-La property – Kowloon Shangri-La, Hong Kong – in 2000.  He has been with the group since then.

Not only did Chef Anthony’s innovative chocolate creations gain him a following among dessert lovers in the Philippines, but his carefully crafted confections and creative sweet delights have also become some celebrated treats of the people.
