Chef Roberto Cimmino

Chef Cimmino's most recent assignment was at the St. Regis Hotel, Shanghai, where he was chef de cuisine of its Italian restaurant, Danieli’s. During his helm, the Italian Trade Commission in China cited the restaurant as "the most authentic Italian restaurant in Shanghai," and City Weekend Shanghai praised the restaurant. He was also a recipient of the prestigious Escoffier Award, which honored five distinct restaurants in Shanghai.

At only 25 years, Chef Cimmino has gained extensive work experience in his native Italy and in China before his assignment in the Philippines. Before moving to Shanghai, Chef Cimmino was the chef de cuisine of Bene, the Italian restaurant at Suzhou Sheraton Hotel & Towers. In this capacity, Chef Cimmino not only supervised the kitchen team, but also collaborated closely with the marketing department to create special promotions and events for the city’s expatriate community. Previously, he moved to Shenzhen, Guangdong Province to open an Italian restaurant, preparing the menu, training local staff and managing the restaurant operations when he was just 19 years old. Before moving to Shenzhen, he spent six months at an Italian restaurant in Temecula in California, where he trained in pastry and deli preparation, food inventory and cost management.

"My stye of cuisine is simple sophistication," said Chef Cimmino. "I deconstruct the dish to show the ingredients in their purest form in order to elevate the gustative experience."

Born in Marino near Rome, from parents who were from Campania and Abruzzo region, Chef Cimmino was always interested in the culinary arts. From childhood, he helped his grandmother, whom he fondly calls "Nonna," prepare classical Italian Sunday lunch for the family. He studied hospitality management with an emphasis on kitchen operations at Michelangelo Buonarroti in Fiuggi for five years, and first gained professional exposure in leading restaurants in Rome, Lecco and Portorotondo in Sardinia before his posting in China.
