Chef Chua Chee Seng
Chua Chee Seng’s years of experience in the culinary arts has made him a master
of Chinese cuisine and seafood. Prior to his tenaure at Shang Palace, he established his career at the Sheraton
Hotel, Hyatt Hotel, Sutera Harbour Hotel and numerous popular seafood
restaurants in town.
Chef Chua was named Second Runner Up in the 3rd
Malaysia Golden Chef Competition, and he was also part of the Sabah Hospitality
Fiesta in 2000.
