Black ink spaghetti is served on a luxurious bed of tomato puree with copious amounts of squid, cherry tomatoes and ricotta and a light drizzle of olive oil.

Pan-seared Salmon Fillet in Walnut Crust

A well-portioned salmon fillet is gently seared to bring out its juices and rolled in a walnut crust mixture. Luscious reduced wine sauce compliments the aromatic combination, while a delicate spoonful of fluffy risotto and spinach gives this dish a twist.

Panna Cotta with a Twist

Dive into a light and silky eggless custard that is flavoured with aromatic vanilla beans and paired with sweet mango jelly, brandy snaps and a dash of lemongrass consomme.
